Per the title, this adjusts the composer file to support both PHP 7 (EOL) and PHP 8.
This also adjusted other dependencies as necessary to get PHPunit and Symfony parts working.
EDIT:
Also, given that Symfony 4 active support ended 1 month ago and Security Support ends in 10 months that was bumped.
