ci: Drop the standalone macOS docs build.

Description

Removes .github/workflows/clp-docs-macos.yaml. task docs:site is OS-agnostic (Sphinx + a broken-links check in a uv venv), so the macOS leg duplicated the Linux clp-docs.yaml run without adding OS-specific signal, and its output was never published (the upload step was gated on ubuntu-24.04). The Linux-only clp-docs.yaml already builds and publishes docs; the other macOS legs remain (clp-uv-checks-macos, clp-lint-macos, clp-s-generated-code-checks-macos, clp-core-build-macos).

Stacked on #2445.

Closing in favor of a new PR with the head branch on this repo (ci-drop-docs-macos) — a fork head can't be retargeted to an upstream base, and stacking works cleanly only with both branches on the same repo. Reopening shortly.
