update stats according to the latest hackathons and privacy projects database

In this update I have edited the
stats.mdwith the recently added hackathons. I have also updated the templates forhackathon-entry-template.mdas well asproject-entry-template.md. I have also aggregated all the stats into asummary.mdnow representing a brief overview of the Ethereum Privacy Ecosystem Research (Hackathon Report) for the year 2025.Next up:
stats.md; specificallyProject Persistance Tracking (Jan.-Oct.)and update it with newly added projects as well asProject Persistance Charts (Jan.-Oct.)
