Update chat demos to use loremllm

Initial pass to test out loremllm as the chat mocking library, let me know what you think @haydenbleasel

TODO:

• need to add the branching back in, useChat doesn't natively support it so we need to do a bit more on the data mocking side
• chunking is currently set to [20, 50] which means its a random interval between 20ms and 50ms. we can pass a function instead and have different chunking delays based off tool calls. this will make the demo more realistic
• typings currently dont work with 5.1 beta so changed it to the latest stable, need to look into why
