feat(template): upgrade testing dependencies for RN 0.84

Summary

• Upgrade @testing-library/react-native to v13 and react-test-renderer to v19 for React Native 0.84 compatibility
• Add @types/react-test-renderer for type support
• Remove deprecated extend-expect import (built-in since TLRN v13)
