BUG: Update DockerHub mirror to include /v2/ #61

Dockerhub expects us to specify the /v2/ API and our URL rewrite rules on Nginx previously fixed-up this for users. While we're putting the rewrite rule back (to fix backwards-compat) we should also still fix this so new or upgraded clusters pick the correct URL going forwards
