The changes to the
FactoryandGuiFactoryclasses in #331 cause undefined references that only seem to appear in release builds. This PR adds the explicit template instantiations needed to fix the issue. It also updates the Dockerfile to build the repository in release, which will be faster for end users and can help identify these types of issues in future (the other CI jobs build in debug)
