Add additional subcategories for energy systems

I've made some changes to the subcategories of the Energy Systems category in the topic_modelin notebook as we discussed in our mail conversation. I updated the code to assign one new subcategory per project.

I'm not sure if this is the best approach, so I'd really appreciate your feedback. Please let me know if you think it should do things differently or if you have any questions. This is thought of a PR for discussions atm.

Hi @lappemic,

This is a very interesting approach that you have chosen. It provides us quantitatively what we need for restructuring. I will experiment with your code later. It definitely makes sense to include everything under energy systems, as renewable energy should also be part of energy systems.

I have also tried different methods based on ChatGPT. What worked best was:

Could you please recluster the following open source projects? --> This is followed by a copy/paste of the complete OST sections with project names and descriptions.

The results are questionable in some places, but some are very useful and inspiring. I think it makes sense to combine the different approches and agree together on a new structure in a workshop.
