Any reason to not try and just keep this at nixos-unstable if we still plan on moving this all into the monorepo at some point?

yeah, release channels get only security updates but no major upgrades (nothing semver breaking, more or less), unstable is likelier to cause breakage more than once per 6 months, which is what we'd expect with the release schedule

Updates the flake.nix and flake.lock so that ohttp-relay is built with an up to date rust toolchain.
