Docs needed to be updated so future digital fellows can run their own workshops. I also removed the data viz workshop from the package so it can live on its own. That particular workshop was causing some problems with the package, and since it isn't interactive there isn't a strong reason for it to be housed within this package. It'll also be easier to access as its own repo. I'm going to follow up soon with the data viz workshop on its own
