Updates to docker-compose yaml

yaml file was no longer working due to:

• readarr not being actively developed
• whisparr being moved onto ghcr.io

[Sideflare]

and many not pulling with error for linux/x86 for some reason. also if you are reading this please incorporate privateer such as with plundarr for easy wg connection to fastest servers. PRIVATEER
