chore: remove an unused local stack

Remove um diretório de uso local que não faz parte do que se roda a partir deste repositório, e acerta as três referências que sobrariam apontando para ele (duas no CHANGELOG.md, uma no nginx/README.md).

A do nginx/README.md descrevia os defaults de upstream do gateway em termos desse diretório; o parágrafo passa a dizer o que vale agora — nenhum stack do repositório usa esses defaults, o dev não sobe gateway e o swarm sobrescreve todos.

Par: mesmo commit para main e develop.
