Adding Simnity to the Connectivity section (bottom of section, one suggestion in this PR).

Why it's a fit for nomads specifically, and not a duplicate of what's already listed: most travel eSIMs in this section are data-only. Simnity issues a local phone number for voice calls and SMS alongside the data plan, which matters when a destination's banks, delivery services or government offices insist on calling or SMS-verifying a local number. There is also a free eSIM compatibility checker that works without an account, and prices are shown in USD or INR rather than one fixed currency.
