Updating to the latest v2 minor version to ensure all works as expected.
As of 2.13.0 public API's are no longer exposed by default so we do it manually in the test now. See https://github.com/apache/apisix/blob/2.13.0/CHANGELOG.md#2130

Update to apisix v2.15 and fix the demo test because of the breaking change in 2.13.
