build(dev-deps): update vite to 8.2.1

Bumps every direct vite range so pnpm resolves a single vite 8 across the workspace: the examples kept 8.1.5 - and with it rolldown 1.1.5 - alive in the lockfile.

Examples keep plain ranges instead of the catalog on purpose, so each one stays a standalone sandbox - the specifiers were bumped in place.

No size impact: agera 2715 / 1337 / 1501 / 1917, kida 4175 / 1339 / 2259, nanoviews 6828 / 4031, store 5563 / 1339 / 2263 - identical to the numbers on vite 8.1.5, all within their limits.
