Fix Release function

What?

Why?

PR Checklist

  • Merged latest master
  • Updated version number
  • All private git packages are at their newest version in both pyproject.toml and environment.yml
  • All git package version numbers match between pyproject.toml and environment.yml

Looks good to me, though I didn't run it since I didn't want to create another release. Only minor thing I can think of is that I usually like to throw the version number into the name of the exe / zip files to make it easier to find when someone downloads a new version.

Completely optional since we haven't been doing it for a while anyway.
