When using the winston OTEL transport instrumentation, if you use the custom audit log level, it needs to be re-written to avoid OTEL sending
severityLevel: undefinedto the OTEL endpoint.This PR adds the song-and-dance we usually do in each app via a format, via a simple option, with docs.
