Implement a block read cache. When block N is requested, fetch that and then block N+1 as well. If block N+1 is the next one to be requested (as it should be for reading a full file from a minimally-fragmented filesystem), then it's already available and doesn't have to be read from the SD card.
H7 is over 1MB/s sequential read, which is very close to the absolute limit of USB FS (12mbit/s) after you include overhead.
