Adds a new section to the Dalgo README that explains how to turn
the numeric/string IDs returned by entity APIs into readable values
using the Lookups folder in Postman. Includes:

- A static value->label map for the top-level subtype field
- A 121-row field-to-lookup table covering every ID-shaped field that
  appears in entity responses, with the exact OptionValue option_group
  filter, contact split (Individual vs Organization), and pointers for
  the special-case fields (Initiator_Induction_Id, self-reference IDs)
