Update CMSIS_6 module to a official, stable release

Summary

The CMSIS_6 module is currently based on commit ARM-software/CMSIS_6@783317a. This commit corresponds to a development snapshot between the v6.1.0 and v6.2.0 releases and is not an official, stable release from ARM.

The upstream CMSIS repository advises the use of tagged releases, such as v6.2.0, for stable, production-ready applications.

For stable versions ready for productive use please refer to tagged releases, like CMSIS 6.2.0.

Describe the solution you'd like

I would suggest to update the CMSIS_6 module to an official, tagged release as a proactive measure to ensure compatibility and stability for the upcoming Zephyr 4.2.0 release.
