Being able to set certain data to be used when using an item as a tool on a cutting board could be quite useful for datapacks.
The two examples which come to me are being able to set Stack Decreasing, for example if using Bone Meal on an item makes sense, having it consume that Bone Meal, and Durability Tax, where rather than the flat 1 durability damage the cutting board currently can apply, you can increase it, maybe to take 2, 8, whatever arbitrary integer you'd want, or perhaps being able to set it to a total durability percentage
