[Feature Request] Missing LOG_LEVEL for auto_setup

Currently there is no way to reduce the amount of logs generated by the auto_setup container, if this is something I can introduce, I'd love to open a PR adding a new env var to change the log level.

Can you give me an example of log lines you'd like to suppress, and why?

@robholland there are multiple DEBUG level logs such as table creation which pollute the log stream, as well as INFO level logs such as Processing schema file. I'd love to be able to run with log level set to warn or even error for cleaner logs.
