Bump Storj and Edge Docker image tags in Docker Compose

Because of this bug storj/storj#5298 some assertions in the integrations tests were commended for allowing the tests to pass.

Acceptance criteria:

• Updates the Docker image tag in the Docker Compose to the last Storj and Edge versions.
• Uncomment the test assertions and check that they pass.
  Find them by searching in the sources TODO(https://github.com/storj-thirdparty/uplink-rust/issues/50).
