Ahh, this is probably due to the undertow using non-blocking IO for /plaintext and /json endpoints.

Can't confidently use virtual threads for workers until this gets merged I think. jboss/jboss-threads#224
Every other solution is gonna be half-assed IMO.

Maybe look into Jetty and servlets too.
Jetty and Tomcat already support virtual threads.
