[Feature] Add history models to quickstart.yml

Workday history models have been incompatible with Quickstart since they require variable configurability to work properly. Once variable configurability is available, we need to:

• Add the history models to the public_models in quickstart.yml.
• Add the corresponding vars for the history models to a new supported_vars section in quickstart.yml
