Cannot install spacy on Python 3.13

Spacy 3.8.7 is marked as supporting Python 3.13 but in practice it's not possible to use it as it depends on thinc which doesn't support 3.13.

NB: there was an issue for spacy 3.13 but it's now closed and locked so I couldn't comment on it.

How to reproduce the behaviour

With Python 3.13

pip install spacy

Thinc supports Python 3.13 in v8.3.6, but they haven’t published Python 3.13 wheels for versions ≥ 9.

OK. So this issue would be fixed by just bumping the thinc min dep version to 8.3.6 I guess.
