Eclipse CDT is Trimming Double Quotes when Adding Symbols to Project

When a project is created
Navigate to C/C++ General -> Paths And Symbols in properties

Select the Symbols Tab.

Add a new Symbol and in the value field, reference an environment variable inside quotes e.g. "${PATH}".

Click save and the trailing double quote is removed.

I can see it is saved with the trailing " in the .cproject file - so it seems to lose it later.

☝️ was incorrect, it is saved like this:

<listOptionValue builtIn="false" value="&quot;OTHER=&quot;${eclipse_home}&quot;"/>

Un-escaped, the value is:

"OTHER="${eclipse_home}"

I'm continuing for a bit more on this.
