add new custom scenario feature

add new custom scenario feature by using --set-file:

• new documentation about this right there in README and add doc about custom hub items crowdsec-docs#1061
• another change that use an new helper to assebmle volume name inline, withouth stripping only the .yaml (could be .yml, or another type of invalid kubernetes resource name)
