[Bug] Only `h.264` video codec works in software rendering mode

Bug Description

In COSMIC Camera, every software-rendered video codec fails except h.264. All other available codec options produce either no output or a corrupted/unusable video file.

Steps to Reproduce

1. Select any video encoder that uses software rendering
2. Try to record the video
3. Observe it may cause panic or produce a un-usable video file

Expected Behavior

All listed software-rendered codecs should record properly and produce valid video files.

0.1.11

Installation Method

Native (built from source)

Linux Distribution

Pop OS 24.04

Additional Context

The app panicks if SVT-AV1 is used during recording.
AOM AV1 works but the output was not proper. Recorded 15s but could only play upto a few sec. COSMIC Player was struggling to play (seekbar going crazy)
H.265 Software video is not playable. (Tried on COSMIC Player & MPV)

I did not found the cause of the crash. If anyone has any ideas, please let me know.

I did a full rewrite of the video recording. It should work in the current main branch and on the upcoming v0.2.0 or newer.
