Rollups V2

📄 Context

This initiative is to track developments towards the release of Rollups V2 from different teams. Here I will be adding milestones/issues of interest that will directly impact Rollups Explorer. Therefore, that will spawn the upcoming pieces of work to also have a rollups-explorer supporting version 2.

🔍 Rollups Node

Milestone:

I am closing the Issue here as the code changes have already moved to a staging status with the merge of #344 into main branch.

Additionally, the main branch has become a trigger for the preview/staging environment, rather than production (unsurprisingly, a dedicated production branch was also created).

Currently, from the deployment perspective, only Sepolia has a nice domain name set: https://preview.cartesiscan.io.
But all eight supported networks are already deployed, supporting both rollup versions.
