Enable rollups-contracts code generation (Mainnets)

📄 Context

This is part of changes to be made targeting rollups-v2-support branch prerelease/rollups-v2-support-alpha currently we're using the cartesi-rollups@2.0.0-rc.17 deployed package on cannon. The mainnets are not available yet. The contract information generation for the mainnets are mapped but disabled.

✔️ Solution

Once a newly released package on cannon's registry contains the mainnet information, codegen should enable the mainnets to be part of the generation.

📈 Subtasks

• Enable mainnet generation in the codegen script.
• Update configuration to accommodate new rollups v2 information.
• Add tests.

🎯 Definition of Done

• Codegen's step to fetch mainnet information should proceed without failures.
• All configurations for mainnet networks are updated to include version 2.
• Processor can index events from targeted mainnet(s).
