I see faces being detected, but no person detections or MQTT events. I have no accelerators and very slow CPU warning (112 ms)

With your detection so slow, frigate is not able to accurately track person so it won't show up. What is your hardware, using CPU for detection is not recommended.

had it on Auto for a few days, no detections, just switched to GPU and it seems to fail completely. Back on auto

It's odd that OpenVINO is not working, but perhaps it has something to do with your VM. I'd recommend a faster object detector. CPU detectors are not recommended.

I have now attached a coral CPU and times are much better, but still no detections.

The Detection appears to be stuck. Restarting detection process... error message with a Coral is often due to power issues (bad USB cable, insufficient power from the port) or also due to virtualization issues. Your VM may be causing your issue here.
