[antithesis] Ensure workload assertions compatible with successful execution

#3059 added support for SDK assertions but the antithesis jobs are currently reporting errors. Need to get the jobs passing.

Jobs are mostly passing with the merge of #3104, but in recent reports the following errors have occurred:

• failure to see deleted UTXOs (local wallet issue?)
• failed to calculate expected proposer (haven't seen this before)

This issue has become stale because it has been open 60 days with no activity. Adding the lifecycle/frozen label will cause this issue to ignore lifecycle events.
