Dark mode for docs

Airflow 3 having dark mode is huge, but now it hurts when I'm working at night and have to look up something in the docs.

Looks like the documentation theme is managed in the apache/airflow-site repository, not in this main apache/airflow repo.

Perhaps this issue should be transferred over to that repository
