Write documentation on how to setup prometheus and graphana to get metrics #1200
Description
We should have a comprehensible document so we don't rely on memory. Also, we should try to make it as easy as possible, so anyone without much experience and context can jump in and set it up.
We may need to take into consideration how it'll integrates with our current workflow to setup new servers (we have a workflow that does that but it probably doesn't take care of the prometheus/grafana part)
