Old version default in Helm chart

the version is set to v0.93.1-postgres but the latest is v0.132

hard to back track and see if there needs to be an incremental upgrade to latest. Can I go straight to latest?

I was able to upgrade safely enough, but probably worth bumping these versions the latest

because I was also forced to update the access control system. Would’ve been nice if I started with something newer.
