rustfs docker image not stable yet

As encountered in this pipeline, the rustfs docker image used in the benchmark tests is not stable yet since it is a beta version.

The last working rustfs docker tag for the benchmark tests is 1.0.0-beta.3. To use later tags we'll probably have to adapt the docker command used in the benchmark tests.

I guess it would make sense to set up renovate in the repo to update such a dependency in a controlled way
