Add a Gallery of Examples

We should add a gallery of examples, e.g., using mkdocs-gallery. I tried getting codex to do this, but it did a pretty bad job, so it'll probably have to be done manually. Note that part of this is generating and saving off some relevant thumbnails, which should be instructive & aesthetic ideally.
